Fennel, Nectarine & Feta Salad

Fresh produce tastes incredible right now, I try not to mess with it too much when it tastes this good and I will take any opportunity to add a fruit to my salad and these nectarines were just too juicy to pass on.

Simply combining some delicious raw ingredients and enhancing the flavours with complimentary herbs and seasonings, that’s all there is to it, No cooking skills involved.



1 bulb fennel

2 nectarines

1 avocado

1 tbs toasted fennel seeds

Juice 1 lemon

100g feta cheese or plant based alternative.

½-1 tsp chilli flakes


Mint leaves



For the dressing

60ml extra virgin olive oil

1 heaped tbsp wholegrain mustard

Juice of half a lemon

2 tbsp maple syrup or honey

½ tsp sea salt

Good grinding of black pepper


  1. Finely slice or use a mandolin to cut the fennel and place in a bowl with the juice of the lemon and season lightly.
  2. De stone and slice the nectarine and avocado.
  3. Arrange the fennel, nectarine slices and avocado onto a platter, top with 100g feta cheese vegan or otherwise and sprinkle with the toasted fennel seeds, chilli flakes, salt pepper and herbs.
  4. Whisk all the dressing ingredients together and pour over before serving.
