Ultimate 'Buttermilk Waffles'

I use my Pancake recipes to make these, with the edition of a little bit of oil. They are light and fluffy, and you could easily make a savoury version. Its hard to say how long they will take to cook as in my experience the waffle makers can vary in quality and heat, it depends on which type you have, so check them after a few minutes, mine is slow!

Ingredients

DRY

  • 1cup all-purpose flour
  • 1tbs baking powder
  • 2tbs caster sugar
  • A good pinch of cinnamon
  • A good pinch of salt

WET

  • 1cup plant-based milk
  • 1tbs of apple cider vinegar or lemon juice
  • 1tsb vanilla extract
  • 1 tbs coconut ground nut oil

Serving ideas

  • Coconut yogurt
  • Berries
  • Maple syrup
  • Nuts
  • Melted chocolate
  • Chopped bananas
  • Ice cream

Instructions

  1. Combine the plant-based milk and ACV or lemon juice in a bowl, this allows the acid to slightly thicken and curdle the milk. You will now have vegan buttermilk.
  2. Place all the dry ingredients into a bowl and mix.
  3. Add the vanilla and oil to the buttermilk and mix.
  4. Slowly add the wet into the dry and whisk together.
  5. Grease your waffle maker and pour 1/3 cup into the toaster and cook for 5-7 minutes or until crispy on the outside. Check after a few minutes, some are more efficient than others.
  6. Serve with maple syrup, vegan yogurt of your choice and fresh berries
  7. For a savoury waffle, omit the sugar and vanilla and 1/2tsp salt.
