Raw Carrot, Ginger and Turmeric Bites

I could decide whether to call them protein balls or energy bites, so i just went for Bites. I think they are basically the same thing. Whichever they a so delicious, full of the good stuff, high protein, immune boosting, anti-inflammatory, antioxidants, vitamins, minerals and fibre. So simple to whip up, just chuck everything on a bowl give it a mix, roll into balls and chill in the fridge.

The benefits of turmeric to our health are huge and if you can squeeze a little bit in every day, all the better. Turmeric supplements are a great way to get to get your daily dose.

SERVES:
Approx 25 bites

Ingredients

Bites

½ cup almond butter

3 ½ tbsp. maple syrup/rice syrup/date syrup/coconut blossom syrup

¼ cup hemp seeds

1 large carrot

A good pinch of salt

1/3 cup coconut flour/ground almonds (i used coconut flour)

¼ melted coconut oil

½ tsp turmeric

1 tsp ground ginger

1 tsp mixed spice

½ tsp ground cinnamon

½-1 tsp freshly grated ginger.

To serve

½ cup desiccated coconut (optional)

¼ cup hemp seeds (optional)

Instructions

  1. Grate the carrot on a medium grater if you have one. With your hands squeeze out most of the juice you want half a cupful of grated carrot. Reserve the juice for drinks/smoothies/soups.
  2. Add the grated carrot along with all the other Ball ingredients to a bowl and stir well till fully combined.
  3. Line a baking tray and roll the mixture into walnut sized balls. If you like you can roll each ball in the coconut or hemp seeds, before placing on the tray.
  4. Place the balls in the fridge for half an hour to firm up.
  5. You can store in an airtight container for 5 days in the fridge. If they last that long!
