Nutty cacao energy balls

Energy balls, bliss balls, protein balls, raw this and raw that balls! I couldn't decide what to call mine, so I went for 'nutty cacao energy balls', because, well that's what they are!

These give the perfect texture, they are soft but not too soft, have a little bite and a crunch from the cacao nibs. I challenge you to stop at just the one!

SERVES:
15-20 balls

Ingredients

For the energy balls

1/2 cup pecan nuts

1/2 cup almonds

1/4 cup raw cacao powder

6 large soft pitted dated

2 heaped tbs cacao nibs

1 tbs almond butter

1 tsp vanilla bean paste

good pinch of sea salt

For the dusting options

1 tbs matcha

1 tbs turmeric

1 tbs beetroot powder

1 tbs raw cacao powder

Instructions

  1. Add all the ingredients for the energy balls in a food processor and blend until a large ball has formed or when you pinch together it holds shape.
  2. Roll into a walnut sized ball and refrigerate for about 1 hour until firm. (if you can wait that long)
  3. Roll in your chosen dusting.
  4. keep in an airtight container in the fridge for 5-7 days.
