Marinated Tofu Pad Thai

This is a super simple way to make Pad Thai thanks to the guys at Blue Dragon. If you're in a rush midweek and want something nutritious and tasty this is the perfect recipe. I add tofu and green veggies to mine and some extra garnishes. The pack with the perfect amount of noodles, sauce and crunchy nuts.



Marinated tofu

1 block 280g

3 tbsp. tamari

1 tbsp. sesame oil

1 inch piece of ginger grated

2 garlic cloves grated

2 tbsp. Sesame seeds


1 Blue dragon Pad Thai kit

1 red chilli sliced

3 handfuls of green veg, mange tout, green beans, sugar snap peas or broccoli

Handful coriander leaves

1 lime cut in half

4 spring onions sliced

Sesames seeds to finish


  1. First get you tofu marinating by cutting the tofu into cubes and combining with the marinade ingredients, set aside.
  2. Add the noodles to large pan of water and boil for 4 minutes, drain and rinse under cold water, set aside.
  3. In a large frying pan or wok, add a little ground nut oil, add the tofu and fry until crisp on the outside and remove from the pan and set aside.
  4. In the same pan add the veg and cook for a couple of minutes before adding the noodles, stir to combine and add the Pad Thai sauce, continue stirring till all combined and the noodles have heated through.
  5. Add the tofu back in and stir once again till combined.
  6. Divide between 2 bowls, adding the chopped peanuts, coriander leaves, chilli slices, spring onions, sesame seeds, and half a lime.
  7. Squeeze over the lime just before eating.
