Griddled Pear and Walnut Bruschetta

I love toast, I am pretty sure there isn't many things you can't serve on toast. This is so simple and makes a delicious light lunch, brunch, or can be made into canape sized bruschetta.

SERVES:

Ingredients

4 slices of sourdough bread toasted

2 pears cut into 8 wedges

Tub of vegan cream cheese with chive or plain and add your own chives or omit altogether. I love Nush foods almond cream cheese.

Handful watercress

Handful toasted walnuts roughly chopped

A few sprig of thyme

Maple and Mustard Dressing

2 tbsp. wholegrain mustard

2 tbsp. maple syrup

2 tbsp. apple cider vinegar

4 tbsp. olive oil

Salt and pepper to taste

Leave from a few sprigs of thyme

Instructions

  1. Mix all the ingredients for the dressing and whisk to emulsify, taste and add seasoning.
  2. Take a griddle pan and heat to a moderate temperature, add a little oil and the pear wedges, cook for a few minutes until griddle lines have developed and turn them and repeat. Remove from the pan from heat and prepare the toasts.
  3. Spread each piece generously with cream cheese, a few sprigs of watercress and some pear wedges. I cut my slice in half as they were large, and used 2 wedges per half slice.
  4. Sprinkle the chopped walnuts and drizzle with the maple and mustard dressing.
