Almond and Pistachio Mylk, with Cardamon and Rose

This feels like such an indulgent and exotic drink but it‘s very simple to make, just as all nut and Plant Based milk is. It‘s sweetened with dates and fragrant with cardamom and rose. You can omit the rose water as I know it can be a love hate flavour. This is delicious ice cold, but equally yummy warmed. I have not tried it with porridge or granola, but I bet it‘s delicious.

SERVES:
approx 1 litre

Ingredients

100g almonds soaked

100g raw Pistachio nuts soaked

8 cardamom pods, seeds only.

6 dates

1.2 litres cold water

1 tbsp. rose water (optional)

Instructions

  1. Ideally soak the nuts over night, failing that a couple of hours in boiling water should be suffice.
  2. Drain and rinse the nuts, place them in a high powered blender, along with the rest of the ingredients except the rose water.
  3. Blitz until very smooth a few minutes should do it.
  4. Strain through a nut bag or cheesecloth/muslin, and squeeze all the milk out.
  5. Stir in the rose water if using, depending on the strength of your rose water adjust the amount accordingly.
  6. Decant into a bottle with a lid and chill.
  7. Serve as you wish, with granola, in chia tea, porridge or just on its own.
